Instructions
Heat a sauté pan over medium-low heat and add 1 Tbsp of butter.
While the pan is heating up, place the green beans into a small, 2-quart casserole dish, draining the brine (you can save this for salad dressings or drink a shot, it’s full of probiotics!).
Once the pan is hot, add the diced shallots and cook until golden brown, about 8 minutes. Spread the shallots evenly over the green beans.
For the mushrooms, you can slice any that are large but leave the smaller bulbs whole.
Add the remaining 2 Tbsp of butter to the pan along with the mushrooms, and sauté until golden brown, another 8 minutes.
Spread the mushrooms on top of the green beans and shallots.
Top with freshly grated parmesan cheese and enjoy!
