Pizza night just got a gut-healthy upgrade. This Probiotic Garlic Pickle Pizza is the perfect mix of cheesy, garlicky goodness with a probiotic-packed twist. By adding OMP’s Fermented Garlic Pickles after baking, you preserve the gut-boosting benefits – because cooking kills those magical microbes. Not only does this make your pizza easier to digest, but the tangy crunch of pickles combined with the creamy dill aioli, takes the flavor to the next level.

Whether you’re experimenting with gluten-free crusts, sticking to traditional dough, or just here for the bold flavor, this pickle pizza will have you reaching for another slice (or three). It’s pizza, but with benefits.

Instructions

  1. Prepare pizza dough according to instructions. We used King Arthur 00 Pizza Flour to make our own dough, but gluten free or cauliflower are other great crust options. 

  2. Preheat oven to 500 degrees F (or follow directions for your pizza dough) and add a pizza stone into the oven while it preheats. Note – don't wait to add the pizza stone as this can cause it to crack! 

  3. Add all the ingredients for the garlic sauce into a bowl and whisk together until combined. Spread the sauce over the pizza dough. 

  4. Top with mozzarella and parmesan cheese and bake the pizza in the oven according to the instructions for your pizza dough (usually anywhere from 12 – 18 minutes). 

  5. While the pizza is baking, slice the garlic pickles and set aside. In a small bowl, whisk together the ¼ c sour cream, brine from the Fermented Garlic Pickles, and fresh dill.  

  6. When the pizza is done baking you can top with the sliced pickles and drizzle the dill aioli over the pizza. Top with additional fresh dill if desired.
