Some days you need a breakfast that is quick and easy, while other mornings you like to take it slow, smell the coffee, and savor brunch with friends. Our Heat & Spicy Huevos Rancheros is uniquely equipped to straddle both options.

If you prepare the Pickle de Gallo ahead of time, you are really just cooking two eggs, and then layering the ingredients together. But the final product looks fancy and isn’t something most people eat every day, so it’s bound to impress.

Instructions

  1. Heat a sauté pan over medium heat and add the butter. 

  2. Once hot, crack the eggs into the pan and sprinkle with salt and pepper.  

  3. When the egg white is cooked through and the yolks are still runny, remove the eggs from the pan. 

  4. Add the tortillas to the pan and spread the beans on top. Heat for a minute until warmed through. 

  5. Top the tortillas with the eggs, Pickle de Gallo, Sauerkraut, Avocado and Cilantro.
