Mini Muffin Quiche with Sauerkraut

Ingredients

  • 8 eggs 

  • ½ cup almond milk 

  • 2 TBSP nutritional yeast 

  • ½ diced onion 

  • ½ diced bell pepper 

  • ½ cup chopped kale 

  • ½ cup shredded cheese (omit for Whole30) 

  • 1 TBSP butter 

  • Salt & pepper to taste

By adding this one ingredient (after they’re cooked) it transforms a simple egg muffin quiche into a powerful multivitamin. Instructions

  1. Preheat oven to 350 degrees and grease a muffin pan with butter. 

  2. Whisk eggs together until well blended. 

  3. Add remaining ingredients (except the OMP Sauerkraut) and stir to coat. 

  4. Evenly distribute the egg mixture into the muffin pan and cook for 18 – 20 minutes until the mini quiches rise and are cooked through the center. 

  5. If serving immediately, top each mini quiche with ¼ cup of sauerkraut and enjoy. If storing for later, add sauerkraut after reheating, just before eating.
