5 pasture raised eggs

1 cup gluten free pankcake mix

1 ¼ cup whole milk (note: we have not tested this with non-dairy milk)

2 cups add ins. We like to add 1 cup steamed chopped broccoli, ½ cup cheddar cheese and 1 cup chopped boiled potatoes. *Omit the potatoes if you want a low carb version.

Spices to taste. A dash of oregano, plus salt and pepper to taste are all this quiche needs. Feel free to get creative!

Instructions
Preheat oven to 425 degrees
Rub butter or ghee in a 8x8 baking pan. We find this size works great but a larger pan would work, only it would result in a thinner quiche.
Prep veggie add ins. As they cool, mix your remaining ingredients.
Whisk 5 eggs. Add in Gluten Free Pancake Mix, milk and whisk again until well blended.
Slowly add in prepped veggies and spices. If they’re still hot, go slow to not cook the eggs too quickly.
Gently mix in cheese.
Bake at 425 degrees for about 22-25 mins until top is golden brown and center is not jiggly when you touch it. If you’re like us, we like the top a good goldebn brown, so we turn the broiler on low, keeping a close eye on it, for another 3-5 mins.
Let cool, slick and enjoy! This quiche saves beautifully in the fridge (covered) for 3 days.
