Instructions
Bring a pot of water to a medium boil.
Slice potatoes in half and boil until just fork tender.
Drain potatoes and immediately rinse in cool water or cover in ice to stop the cooking process. Drain any excess water.
Add potatoes into a large bowl with all remaining ingredients.
Toss to coat and enjoy!
